Native to the mountains of Afghanistan, this edible resin is exuded from the taproot of a herb called Asafoetida or Hing. This spice is extremely pungent and flavourful. In India and many cultures around the world Hing is used as a digestive aid in food. It plays a critical flavouring role in Indian vegetarian cuisine by acting as a savoury enhancer. In fact, the demand for this spice is so high that many cheaper fake versions are available in the market today.
This heirloom food has been selected for its genetic integrity and medicinal value while our heirloom farmers passionately adhere to the highest standards of natural farming. Slow, chemical-free processing methods are used where necessary.

Hing has carminative, anti-viral, anti-bacterial, anti-inflammatory, sedative and diuretic properties. Considering its therapeutic and curative powers, asafoetida is also referred to as the 'Food of the Gods'.
Suggested Use:
Hing's distinct flavour and aroma can transform any boring dish. It is used to harmonise sweet, sour, salty, and spicy components in food. The spice is added to the food at the time of tempering.
In small quantities, Hing can be mixed with salt and eaten with raw salad.
Storage:
This item is pure and undenatured. It can be stored in an air-tight container away from direct sunlight for 1-2 years or more. Do not refrigerate.
Note:
Odour of Afghani Hing is so strong that the pungent smell will contaminate other spices stored nearby if it is not stored airtight in its container. However, the odour dissipates upon cooking; in cooked dishes, it delivers a smooth flavour reminiscent of leeks or other onion relatives.
